  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped green chilies (canned or fresh)
  • 1/4 cup chopped fresh cilantro
  • 10-12 dried corn husks

Instructions

Making Tamales
  1. Soak the corn husks in warm water for at least an hour, or until they're pliable.
  2. Puree the corn kernels in a food processor or blender.
  3. In a large mixing bowl, combine the pureed corn, masa harina, butter, baking powder, salt, sugar, cumin, garlic powder, onion powder, and cayenne pepper. Mix well.
  4. Add the chopped green chilies and cilantro to the mixture and stir until combined.
  5. Remove the corn husks from the water and pat them dry.
  6. Take one corn husk and spread about 1/4 cup of the masa mixture onto the center of the husk, leaving about 1 1/2 inches of space at the bottom and top.
  7. Roll the husk around the filling, tucking the bottom edge up and over the filling, and then folding the top down to enclose the filling.
  8. Tie the tamale with a strip of soaked corn husk or kitchen string, if desired.
  9. Repeat with the remaining corn husks and filling.
  10. Arrange the tamales in a steamer basket, with the open ends facing up.
  11. Steam the tamales for 45-60 minutes, or until the masa is cooked through and set.
  12. Remove the tamales from the steamer basket and let them cool for a few minutes before unwrapping and serving.
