Flank steak is one of the most flavorful cuts of beef. When marinated in adobo sauce, it becomes even more mouth-watering. Add some summer corn and tomato relish to the mix, and you have a dish that's sure to impress. Here's a step-by-step guide on how to create this delicious and unique recipe.
Ingredients
For the adobo marinated flank steak:
- 2 lbs flank steak
- 1/2 cup adobo sauce
- 1/4 cup olive oil
- 1 tbsp smoked paprika
- Salt and pepper
For the summer corn and tomato relish:
- 2 ears of corn, husked
- 1 pint cherry tomatoes, halved
- 1/4 cup chopped fresh cilantro
- 2 tbsp lime juice
- Salt and pepper
Instructions
Marinating the Flank Steak
1. In a small bowl, whisk together the adobo sauce, olive oil, smoked paprika, salt, and pepper.
2. Place the flank steak in a large resealable plastic bag, pour the marinade over the steak, and massage it to coat the meat. Make sure to remove as much air as possible before sealing the bag. Marinate in the refrigerator for at least 2 hours, or overnight if possible.
Preparing the Corn and Tomato Relish
1. Heat a grill to medium-high heat. Grill the corn, turning occasionally, until it's charred and cooked through, about 10 minutes. Remove from the grill and let cool.
2. Once the corn has cooled, cut the kernels off the cob and transfer them to a medium bowl.
3. Add the cherry tomatoes, cilantro, lime juice, salt, and pepper to the bowl. Stir to combine.
Cooking the Flank Steak
1. Preheat the grill to high heat. Remove the flank steak from the marinade and discard the remaining marinade.
2. Grill the steak for 4 to 5 minutes per side for medium-rare, or until it reaches your desired level of doneness. Transfer the steak to a cutting board and let it rest for 5 minutes before slicing.
Serving the Dish
1. Slice the steak against the grain and serve it with the summer corn and tomato relish on top.
2. You can also serve this dish with some crusty bread and a side salad.
