  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 can (4 ounces) chopped green chilies, drained
  • 1 can (14-1/2 ounces) enchilada sauce
  • 12 corn tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped fresh cilantro (optional)

Follow these steps to make the perfect beef enchilada casserole:

  1. Preheat your oven to 375°F. Grease a 9x13 inch baking dish.
  2. Cook the ground beef in a large pan over medium-high heat until it's browned, breaking up any large chunks with a spatula.
  3. Add the cumin, garlic powder, onion powder, salt, and black pepper to the pan, stirring to combine.
  4. Add the black beans, diced tomatoes, tomato sauce, and chopped green chilies to the pan. Cook, stirring occasionally, for 5-7 minutes or until the mixture is heated through and the flavors have melded.
  5. Spread 1/4 cup of the enchilada sauce in the bottom of the prepared baking dish.
