Chicken Enchilada With Corn Tortillas

Ingredients:

  • 2 cups cooked and shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 8-10 corn tortillas
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp all-purpose flour
  • 1 tbsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1 can (14oz) diced tomatoes
  • 1 can (4oz) diced green chilies
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh cilantro

Instructions:

1. Preheat your oven to 350°F.

2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.

3. Add the all-purpose flour, chili powder, ground cumin, dried oregano, and salt to the skillet. Cook for 1-2 minutes, stirring constantly.

4. Add the diced tomatoes, diced green chilies, and chicken broth to the skillet. Bring the mixture to a simmer and cook for 10-15 minutes, until the sauce has thickened.

5. Stir in the chopped cilantro and cooked chicken.

6. To assemble the enchiladas, spoon about 1/4 cup of the chicken mixture onto each corn tortilla. Sprinkle some shredded Monterey Jack cheese and cheddar cheese on top of the chicken mixture.

7. Roll up the tortilla and place seam-side down in a 9x13 inch baking dish. Repeat with the remaining tortillas and chicken mixture.

8. Pour the remaining sauce over the enchiladas and sprinkle with additional cheese.

9. Bake for 20-25 minutes, or until the cheese is melted and bubbly.

10. Let the enchiladas cool for a few minutes before serving. Garnish with fresh cilantro and sour cream, if desired.
