Ingredients:

  • 8 cups of black beans, drained and rinsed
  • 6 cups of corn kernels
  • 6 cups of diced tomatoes
  • 2 cups of diced green bell peppers
  • 2 cups of diced red bell peppers
  • 2 cups of diced onions
  • 4 jalapeño peppers, seeded and chopped
  • 1 cup of white vinegar
  • 1/2 cup of lime juice
  • 1/2 cup of chopped fresh cilantro
  • 4 teaspoons of ground cumin
  • 1 tablespoon of salt
  • 1 tablespoon of sugar

Instructions:

1. Place all the ingredients into a large pot and stir well to combine.

2. Bring the mixture to a boil over medium-high heat, stirring occasionally.

3. Reduce the heat to low and let the mixture simmer for 15 minutes, stirring occasionally.

4. While the mixture is cooking, prepare your canning jars and lids according to the manufacturer's instructions.

5. Once the salsa is ready, use a ladle to transfer it into the prepared jars. Be sure to leave 1/2 inch of headspace at the top of each jar.

6. Wipe the rims clean, place the lids on top, and screw on the bands until they are just tight enough to hold the lids in place.

7. Process the jars in a boiling water bath for 15 minutes.

8. After the processing time is complete, carefully remove the jars from the water bath and let them cool on a wire rack.

9. Once the jars have cooled, check that the lids are sealed by pressing down on the center of each lid. If the lid flexes up and down, the jar did not seal properly and should be refrigerated and used within two weeks.
