Recipe For Pickled Corn On The Cob

Ingredients:
-6 ears of corn on the cob
-2 cups of water
-2 cups of white vinegar
-1/2 cup of granulated sugar
-1 tablespoon of salt
-1 teaspoon of mustard seeds
-1 teaspoon of coriander seeds
-1/2 teaspoon of peppercorns
-1/2 teaspoon of red pepper flakes
-2 cloves of garlic, minced
-1 red onion, sliced
-1 jalapeno pepper, sliced
-1 tablespoon of olive oil
-1 bunch of cilantro, chopped
Instructions:
1. Begin by removing the husks and silks from the corn on the cob. Rinse with cold water and pat dry.
2. In a large pot, combine water, vinegar, sugar, salt, mustard seeds, coriander seeds, peppercorns, red pepper flakes, and minced garlic. Bring the mixture to a boil over medium-high heat, stirring occasionally to dissolve the sugar and salt.
3. Add the sliced red onion and jalapeno pepper to the pot and cook for 5 minutes. Remove from heat and set aside.
4. In a separate large pot, blanch the corn on the cob in boiling water for 2-3 minutes. Remove the corn from the pot and immediately submerge it in a bowl of ice water to stop the cooking process. Once cooled, cut the corn into 2-inch pieces.
5. Heat olive oil in a large skillet over medium-high heat. Add the corn to the skillet and cook until slightly browned, stirring occasionally for about 5 minutes.
6. Add the corn to the pot with the pickling mixture and stir to combine. Let the mixture cool to room temperature, then cover and refrigerate overnight to allow the flavors to meld together.
7. Before serving, add chopped cilantro to the mixture and stir to combine.
