Chicken Chili With Black Beans And Corn

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the onion, garlic, and peppers and sauté until they begin to soften, about 5 minutes.
  3. Add the chicken to the pot and season with chili powder, cumin, paprika, salt, and pepper. Cook until the chicken is no longer pink, stirring occasionally, about 10 minutes.
  4. Add the black beans, corn, diced tomatoes, and chicken broth to the pot and bring the mixture to a simmer.
  5. Cover and continue to simmer for at least 30 minutes, stirring occasionally. The longer you let the chili simmer, the more flavorful it will be!
  6. When the chili is done, ladle it into bowls and top with shredded cheddar cheese, sour cream, chopped fresh cilantro and/or diced avocado, if desired. Serve with warm cornbread or tortilla chips on the side for some extra crunch.
